The Candidate

 Our team at Hotel de France is looking for an ambitious and enthusiastic individual to help lead and become part of our kitchen team. 

Duties will include developing and learning new recipes, daily preparation and presentation of food and ensuring the kitchen is kept hygienically clean. This position also involves training and development of the staff and administration of Food Safety / Health & Safety policies, purchasing policies / procedures and assessment.

You will work to assist in setting and achieving targets, keeping a balanced workload, prioritising tasks on a daily and weekly basis.

Qualifications and Experience

Cooking qualifications to NVQ level 3 or equivalent is essential.

A strong understanding of European HACCP, Food Hygiene & Allergen legislation will be an important part of the role. Food Safety to level 2 would be essential and Food Safety to level 3 would be desirable.

The ideal candidate will have at least 2 years culinary experience within a similar sized 4* operation in a similar role, with a good understanding of European cuisine and ideally large volume production. 

This position requires a high level of English, good communication skills and excellent attention to detail.

The Candidate

The Hotel de France is looking for an experienced, friendly. enthusiastic and professional individual to join our Front Office team. 

The ideal candidate will be keen to take on new challenges and committed to providing a courteous and professional service to our guests. 

Reporting to the Board of Directors, duties will include managing, training and co-ordinating Front Office staff to provide an effective and helpful service to guests. Duties will also involve daily administration, establishing good guest relations and hotel Duty Management.

Candidates should have an excellent level of English, communication skills and the ability to lead and motivate staff. 

 

Qualifications

Qualification in Hospitality and/or Tourism desirable.

Experience
One to two years experience in a similar role within a large 4/5 star establishment is essential and knowledge of Opera or similar Front Office system would be advantageous.

The Foundation of our cooking is based on sourcing quality local products. By utilising such products as hand dived scallops, line caught sea bass and local vegetables, we are having products at their peak quality at the right time and reducing food miles which affects the quality of the product as well as the environment.

The cooking methods are inspired from different regions of India; seafood recipes from Goa to richer dishes from Punjabi in the north.

Modern European techniques such as slow cooking, low temperature and sous-vide are used to perfect the blend of spices and quality of the product.

Dishes are presented simply in a modern European way, letting the food ‘do-the-talking’ rather than masking the food in heavy garnishing and sauces.


The essence is to retain the intensity of flavours, but allow for lighter and healthier dishes.

 Experience
The ideal candidate will have at least 1 years culinary experience within a large 4* or 5* Hotel or 3/4 rosette restaurant to Chef de Partie level, with a good understanding of European fine dining and ideally have experience of working with Indian Cuisine and spices.

Duties will include, but are not limited to, monitoring the car parks, advising, assisting our guests and visitors on parking. Keeping the areas clean and tidy. Enforcing the Car Parking rules as applicable.
